The way I have been doing it so far... after setting a waypoint. I open the "polar", just next to the waypoint button. Go back to the Waypoints, then for that particular waypoint , select the sail to the right.

Frank, are you talking about the waypoints or the scheduler points? The scheduler points are plonked 1 hr ahead but then you can change the time. What I do is count the hour circles and add that to the current hour to drive me over to the next cell, then I play with the minutes until I'm just 1 minute over the border. Then you can ask for the polar, click on the pin (top, middle) and finally I set the wind speed of the new cell and start playing with the TWA.
Then I go back and set the heading and the sail. The polar is still there as another browser page, you can bring it back up again.
If it's close to the change of forecast, I don't need to even think, the time is either 07:5x or 19:5x where x is the iteration minute.

With these wind forecasts it is not going to be fun at all. If we had auto-sail the best strategy would be to place the boat in a straight line to Punta del Este and leave it, and probably win

I have only used scheduled points , till now and after some learning, I find them quiet accurate to use.
you add one and a green flag comes on your track, change to time to what you like and then set the new heading and select new sail, ( the polars are also quiet clear to understand, though they pop-up in a new window.)
I check the time against either a cell border, with changing winds, or the yellow marker for the windupdate. Which often requires an adjusted heading and sail. For a night I find it easy to set the scheduler and I think that the schedule points do not drift (like the purples in LiveSkipper) or shift in time (like the greens in LS)
OK; clipper race, set my points for the night and will see tomorrow , if it comes out like planned

Yes if next cell wind parameters are better, then setting a schedule point the minute just after you enter the next cell will speed you.
No if next cell wind parameters are less good: it's better to set a schedule point at the iteration minute after entering the new cell, then you'll sail in the new cell with the old one's wind parameters for a few minutes till the iteration
